Vitamin B12 is a nutrient that can easily become overlooked, particularly on a vegan or vegetarian diet, favouring iron, zinc and calcium. However, B12 has perhaps one of the most complex absorption processes in the digestive tract, with intakes heavily limited on vegan diets.
